Amarelle cherries are a type of tart or sour cherry characterised by their yellowish-tinted flesh and clear juice, with red pigment only in the skin. In contrast to Morello cherries, which have red flesh and juice, Amarelles offer a slightly less acidic or milder tartness. Amarelles, like the Montmorency variety, is a staple for pies, while the Marasca variety is used in maraschino liqueurs.
